Tundra Swan Recipe

I've heard that the Tundra swan is the best tasting waterfowl, and I've heard that it's the worst. I had to try it. My buddies and I were all lucky enough to get swan tags this year and all of us got our swan. I personally am a huge fan of the crock pot. This is my recipe.

AP's Tundra Swan Recipe

1 leg of swan
1 breast of swan
1 bottle of Italian dressing
a little water to cover the meat

Put everything in the crock pot turn on low before work, come home after work, make some rice or noodles, and some side dishes. Serve.

I would give this 4.5 out of 5 stars it was super delicious, smelled a little funny to me but it works. It tastes a lot like a sweet pot roast. My buddy tried marinating his swan in teriyaki and then grilled it. He threw it all away. Said it was tough and tasted like ass.
I have used this same recipe to make the normally tough and stringy goose leg meat fall right off the bone and taste great.

I also put the remaining swan into a turkey chowder recipe, minus the turkey, plus swan. It was really good but if you don't cook the swan long and slow the meat does get a little tough.

What does ass taste like... since I've never eaten any donkey?
